Fritatas can be baked or pan fried, in this recipe I use pan fried. A fritata is basically an open faced omelet. The list of ingredients is for two servings; just add more for addition servings.

Ingredients:
2-plain corn tortillas crumbled up small
2-cups taco seasoned ground turkey cooked
2-green onions diced
1-medium ripe tomato
1-jalapeno pepper chopped seeds removed
4-large eggs

Directions:
Mix all the above ingredients together in medium mixing bowl and add to a well seasoned 12 inch skillet with low heat and the lid on until firm.
That's It !! Serve with sides of salsa, sour cream or Avocado
