Very Simple Chicken Scallopini

This recipe generally referes to Veal as a meat source; but most any kind of meat can be used. 
If you read about scallopini in cookbooks and the Internet you will find that most of these recipes are very rich, mostly high in fats.  My recipe is very lite enabling you to enjoy often.  In this recipe I use Chicken.  Add more as needed.

Ingredients:
6-oz chicken breast thinly sliced or chicken tender loins
12-14-oz of fresh mushrooms thinly sliced
1-can of 97-percent fat free cream of mushroom soup

.Olive oil
Parmesan cheese (the grated type)

Directions:
I use the tenderloins, in a med-large skillet
add enough olive oil to lightly coat the cooking surface and lightly brown the chicken, now remove the chicken and set aside.  Add the mushroom soup (UN-deleted) to the skillet then add the sliced mushrooms and on medium heat saute till slightly tender now place the chicken back in the skillet and coat the top of the chicken with the grated Parmesan cheese; continue cooking till the cheese is melted,                                            That's It !!  serve with  Whole Wheat Linguine pasta

"Tripple Chocolate Mess"

I review and fix allot of recipes, I am not sure where I got this one; but I like it since we both like chocolate a lot.  This recipe will certainly give you a chocolate fix.  This by the way is cooked in a crock pot.

Ingredients:
1-pkg chocolate cake mix.
1-pt fat free sour cream.
1-pkg sugar- fat free instant pudding mix.
1-small bag of dark chocolate chips.
1/2-cup apple sauce (no-sugar added)
1-cup water
4-eggs
1-cup walnuts if you like

Instructions:
Spray your crock pot inside with non-stick spray.  Mix until smooth.  keeping in mind that the chips and nut will remain solid. pour this all into a crock pot and cook on low 6-8 hours
That's it!!

"A Chicken in a Chicken in a Chicken"

The title of this recipe signifies that this could be fun; but it can also be a bit challenging when you first read the directions, just hang in there it's not as hard as it seems.

Ingredients:
1- whole chicken
1- boneless chicken breast
1-boiled egg (peeled)

Directions:
This is the part that you might say "noway" but it is not that difficult; take the whole chicken and on a cutting board place the chicken so that the back is up facing you; remove the parsons nose (the tail)
and with a sharp knife cut thorough the skin down the bake bone the full lenght of the chicken. What you are going to do is bone out the chicken except for the leg and thigh bone leave them there, once you have most of the bones removed, take the separate boneless breast and butterfly it open and place the boiled egg inside and fold the butterflied breast back over the egg. Now place the breast with the egg inside to boned out chicken and place this in a baking pan and loosely tie the legs and bake at 375 degrees or until the inside temperature is 180 degrees.  That's it!!  you now have a chicken in a chicken in a chicken

A Drop In The Bucket

This recipe is new idea for a unique drop biscuit.

.
Directions:
Use what ever drop biscuit recipe your comfortable with.  I use a ready mix (Jiffy Baking Mix) just to keep it simple.   Just follow the directions on the package.
Once you have your biscuits mixed up just simply place the dough in a seasoned muffin tin and fill each hole to the top. now you have a drop in a bucket; Bake according to the directions on the package. Now you have a drop(biscuit) in a bucket (Muffin tin)  This is a different way of enjoying a drop biscuit that is not all weirded out.       That's it!!

"Coffee Filter Cheese"

This is a fun and unusual "Recipe".

Ingredients:

1- cup fat free plain yogurt (the flavored ones don't work)
1- coffee filter
1- small strainer
1- bowl slightly smaller than the strainer.

.
Directions:
You simply add a cup of the yogurt to the coffee filter; now place the filter with the yogurt into the strainer; then place the strainer over the bowl and place into you fridge, for approx. 4-5 days.  At end of the 4-5 days most of the moister in the yogurt will be drained out and you now have yogurt cheese spread to apply to you morning toast.
That's It!!

Peanut Soup

This is one of my most memorable soup recipe that was given to me by a chef at restaurant we visited.  I will not divulge where to protect my source.  We found this soup to be very different as the name applies.

Ingredients:
2-cups dry Lima beans
28 oz chicken stock
1- stalk celery
2- bay leaves
1/8- tsp nutmeg

.
1-small jar of LOW-FAT chunky peanut butter.

.Directions:
Place first 5 ingredients in a crock pot and cook on high till Lima beans are mushy (Approximately 2 hrs, add more stock if this is too thick.  Now add the jar of peanut butter cook on low another hr

Serve with some chopped dry roasted peanuts on top.  THATS IT!!
