Easy fudge

This fudge recipe is not loaded in fats and sugars and is so simple to make, that even a non-cook can easily make this yummy fudge.

Ingredients:
2 bags of semi-sweet dark chocolate chips.
1/4 cup skim milk or canned milk
1/2- table spoon vanilla
2- cups walnuts (chopped)

Directions:
place chocolate chips in a medium pan and heat on a very low temperature until melted and then add all the other ingredients.  Stir
until everything is mixed well and pour into a seasoned cake pan and chill for a couple hours until fairly firm.  Once firm cut into 1 inch pieces and enjoy real  fudge.         That's it

"Lite" Cheesy Chicken

When thinking about something like cheesy chicken you would think no-way this would be loaded in fats and calories, but not really if you use this method.  Not only is it simple but very tasty with-out the fats and extra calories.

Directions:
Start by using the OMG naked fried chicken recipe found in this blog. (use the search box in the upper left corner of this blog) After you have cooked your chicken; just spoon some un-deluted Low-Fat Cheddar Cheese soup put out by Campbell's (they make a low-fat version) over the chicken pieces and simmer on low about 10 minutes. And wallah you have Cheesy  Chicken.

REDICULES CAKE

This is a recipe that I saw recently; about weird holiday desserts and thought it might be fun to pass on this ridicules recipe just for fun.  But if you like it and brave enough to try it more power to you.  I won't try it.

This is a three layer cake; for lack of any other description.

.
Ingredients:
2- cake mixes (your choice)
3- 8" pies pre-baked (any kind that has a top crust))
enough frosting to cover a three layer cake.

.
Directions:
Mix up all of the cake mixes and set aside. Using three 9" round cake pans add just enough cake mix to cover the bottom of each cake pan and then add a pie on top of this (less the pie tin) now cover each pie well with the remaining cake mix and bake till each cake is done.  Now set each cake on a cooling rack for 1hr.  Carefully remove the cool cakes out of their pans and stack each cake on top of each other with a thin layer of frosting in between each layer; let that set for a few minutes then frost the whole cake.          You now have a three layer ridicules cake
This should make any teenager or caveman ready for dessert

PUMKIN PIE MUFFIN



This recipe is a muffin with a filling in the middle, and since it is near the Holidays I thought you might like something different and tasty.

Ingredients:  (makes 6-8 regular muffins)
1-small can of pumpkin
2-cups baking mix
1 1/2-cups splenda
1-tbs nutmeg
1/4-tsp allspice
1/4-tsp ginger
1/4-tsp cinnamon
2-eggs
1/2-cup skim milk
1/2-cup applesauce

Directions:
Empty the can of pumpkin in a mixing bowl and add:
3/4 cup of splenda
1-tsp nutmeg
1/4-tsp allspice
1/4-tsp ginger
1/4-tsp cinnamon
mix these ingredients together and set aside.
Now in a separate bowl mix 2-cups baking mix,2-eggs,3/4-cup splenda
1-tsp nutmeg, 1/2 cup applesauce 1/2 cup skim milk and 1/2 of the pumpkin mixter and stir this up by hand.  In each muffin cup add mixter to 1/3 full the add a table spoon of the pumpkin mixter in the middle of each cup then add enough of the baking mixter to fill the cups.  Bake at 400 degrees for 10 Min's then turn oven down to 350 for 20 Min's or until done, let cool 10 Min's and serve. hint: use release spray on pan

Dark Chocolate "Drop" cookies

Finally a Chocolate Chip cookie that is low in calories and very "Yummy".
We both love Chocolate Chip cookies, but found that most traditional recipes were very rich and tended to be in the hardly never category;
I have spent off and on about 2 years trying to come up with a cookie that was low in calories and looked like and tasted like a cookie that could be enjoyed without feeling like 2 cookies would take care of lunch and supper as far as calories were concerned.  The following recipe made in this manner is very low in calories and fats plus just as simple to make as most traditional recipes.

Ingredients: (for 1 dozen cookies)
.
2-cups Jiffy Baking mix
1/2- tbs real vanilla extract
1-cup dark chocolate chips
1-tbs special dark coco powder
1-cup splenda
1/4-cup non-fat milk

.
Directions:
.
In a mixing bowl add all ingredients and mix with a fork until you have a very stiff dough; very much like traditional cookie dough, if the dough is too stiff add just a little more milk or water (the dough should cling to the fork) If it is too thin add a little more Jiffy Mix. Now prepare you cookie sheet, since there is very little fat in the dough you should spray you cookie sheet with a non-stick spray.  Using a spoon that is soup spoon size place 12 globs of dough on the cookie sheet about 1-inch apart and bake at about 350-400 degrees until the cookies are starting to brown on the bottom (about 15 mins ) remove when done and let cool 15 mins.

Slum Gullion

The term slum gullion mearly referes to a poor thin stew, but it don't need to be.  Mostly the way I see it is choices of ingredients and procedures.  This in my opinion is simply a quick one pan meal that includes meat and vegetables in a savory sauce.  I recommend serving this with a salad and bread of your choices.  The choices are yours as to the ingredients for the Slum Gullion also depending on what you like; the following is my version of Slum Gullion.

Ingredients:
1-lb ground turkey or ground beef
1- can of salt free diced tomatoes
2-cups cooked pasta (elbow Macaroni or egg noodles)
1-cup diced onion
1-cup diced sweet pepper ( or hot your choice)

Directions:
This is where simple comes in play; in a med-large skillet brown the ground meat and then add all the rest of the ingredients and simmer for about 20 minutes. Add more liquid if needed, I like mine  rather thick and not runny like Goulash          That's It !!

Myks Extreme Pizza

Since I love pizza I have been experimenting on a logical choice.  Most of the calories come from the cheese and choice of toppings. So here is what I come up with.  I only used about 1/4th of the cheese an use toppings that are low in fats mostly. I also use a thin crust.  I went to papa Murphy's and ordered a pizza with very little cheese and a grilled chicken for the meat topping,  most any pizza parlor would do the same try it. Now here is the way I made my pizza at home.

Ingredients: (for a 12 inch pizza)
1-12 inch Boboli thin crust
1/2 pound Italian seasoned ground turkey (pre-cooked)
1/2 jar marinated artichoke hearts
1/2 cup part skim milk mozzarella cheese
1/2 cup grated Parmesan cheese
1-cup ripe olives sliced
1-cup sliced mushrooms

low fat ranch dressing (red sauce if you prefere)
salt free Italian spices

.Directions:
now its time to build you pizza.  Using the boboli crust spread on some ranch dressing (enough to coat well) and liberally sprinkle this with the Italian seasoning now add the Parmesan cheese all over then add the pre-cooked ground turkey, olives, mushrooms and artichoke hearts; sprinkle all over the top the mozzarella cheese.  You now have a low calorie oven ready pizza (I generally add a few tomato slices on top) use the guide on the Boboli package for cooking and heat.  That's It Enjoy!!

Pancho's Grilled Chicken with Enchilada Sauce

Recently I enjoyed a marvelous Mexican Dish that I would like to share.
It is a very simple recipe to make if you like Mexican food.

Ingredients:
1-small can of enchilada sauce
1/2- medium onion
1-small green pepper or Anaheim pepper             
1-sprig cilantro chopped
1-tsp corn starch
2-Grilled chicken breasts

.
Directions:
First off grill your chicken your way.
Now make your sauce by separating the onion 1/2 slices and saute them in some olive oil till lightly brown, add the pepper lightly chopped, and the cilantro, the corn starch to the pan; stir this around until the corn starch coveres everything and no clumps. then add the enchilada sauce and stir this all up heat on med-low heat until the sauce bubbles.  On a plate place a grilled breast and top with plenty of the sauce and top with a small amount of grated cheese if you like.  Serve with a side of Re-Fried beans and a nice salad topped with salsa.     That's it!!

Cobblepie

Since we have been traveling, things haven't been normal, first off my computer developed an "attitude" but that's fixed so now I should be back to working on this blog. I tried out in desperation a new dessert that I like very much. It is a cross between a cobbler and a pie; so here it goes.

Ingredients:
2-cups baking mix
1-20 ounce can of no-sugar added pie filling
1/4 cup brown sugar
1-cup dried cran berries or raisins
1-tsp nutmeg
1/2 cup sugar or splenda

Directions:
Start by mixing the baking mix-nutmeg-sugar in medium mixing bowl and add enough liquid to make a pourable batter.  Using a 10 inch deep dish pie tin that has been sprayed with non-stick spray; pour in about half of the mixture of batter and bake at 375-400 degrees until just firm. Remove pie tin and let this cool about 5 mins.  Now add the pie filling and raisins lightly mixed and pour remaining batter over the top and bake till lightly brown.  Set to cool 5-10 mins. slice and enjoy.

Bannock (pan bread)






'


This is an old standby recipe used by Boy and Girl scouts to make bread while out camping.  It is very simple to make but also very tasty, also used by early pioneers; it is similar to Indian fry bread.  Indian fry bread traditionally is made with a yeast dough; this recipe does not use yeast.

Traditional Recipe

.
Ingredients:
2-cups flour
2-tbs baking powder
2-tbs sugar (more if you like)
2-pinches salt

.
Directions:
Mix all ingredients together and add just enough water to make a dough; divide the dough into 4-6 pieces and form each piece into a thick patty and place each patty into and oiled skillet.  On med-low heat brown each side till golden brown; at this point when both sides are browned it should be done.

Iite Version

.Ingredients

2-cups baking mix
2-tbs splenda
2-pinches salt
.
Directions:
Use the same directions as above.  You can also bake both versions.
for added fun you can add dried fruit or fresh fruit. Just about any flavor or coating can be added to make these taste the way you like.          Thats it

"Spotted Pup" (Cowboy Pudding)

Spotted Pup is an old frontier dessert made very simple due to the lack of certain ingredients which just was not available to early travelers, eggs being the most common item not readily available to travelers. So this recipe is an early version of rice pudding; also known as "Cowboy Pudding" and was made in a dutch oven over a open fire.  This also works if your are out camping and have a dutch oven, but my version is more modern that can be made at home on the stove.

Ingredients:
2-cups uncooked white rice (I prefer jasmin rice)
1/2-cup wheat bran
2-cups slenda or sugar
3-quarts skim milk. or canned milk in equivalent amount.
1-lb raisins or other dried fruit
1-tbs nutmeg

.
Directions:
Place all ingredients in large sauce pan or dutch oven; and bring to just starting to bubble. reduce heat to simmer and stir frequently as sticking will happen real easy. when rice is done (about 20 minutes) keep stirring as this will help with the thickening; keep on low heat stirring constantly until spoon stands up on it's own, at this point the pudding is done and ready.     Thats it

I frequently use left-over rice in a similar way it's faster and a good use of left-overs. just adjust the ingredients according to the amount of rice you have

Huckle Buckle

This recipe is a quick dessert so simple I recommend that you let kids or non-cooks make it.
If you don't have Huckle Berries in your area; Blue Berries make a good substitute.

Ingredients:

1 white cake mix
2 cups Huckle Berries or Blue Berries
1/4 cup Oat Bran

.
Instructions:

Mix the cake mix according to the directions on the package. Add your berries to the mix and pour into a well non-stick 9x9 inch cake pan and add a few berries to the top; and bake according to the instructions on the cake mix.                                         Thats it

Old fashoned Wild Black Berry Slump

This is an old recipe that I have modernized but still works quite well.  Basically this is how cobblers got started.  This Slump recipe is a cousin to a cobbler; also known as Black berry grunt, it just depends on what it's called in your area.

Ingredients:
4 cups fresh wild black berries.
1 cup Splenda or sugar divided.
1 cup all purpose flour
1 1/2 tsp. baking powder.
1/4 tsp salt.
3/4 cup skim milk.
2 tbs extra virgin olive oil.

Directions:
Pre-heat oven to 373 degrees.  Put Black berries in a 6 cup glass deep dish pie plate. Sprinkle 3/4 cup Splenda or sugar over the berries.  Sift together flour and baking powder into a medium bowl.  Stir in salt and remaining 1/4 cup sugar or Splenda.  Add milk and oil and whisk till smooth. and pour batter over berries; and bake 40-45 Min's until top is golden brown. Transfer slump to cooling rack
 for 20 Min's. Serve warm           That's it enjoy

Blue Berry Buckle

Blue Berry Buckle has been a part of my life as long as I can remember.  Altho this simple desert as been associated with many different gatherings, such as showers etc.  There is no reason you can't have it anytime.  There are many different versions of this delightful summer desert; my version is probably the most simple and fastest way of making this dessert.

Ingredients:

.
1 1/2- cups Bakeing mix
1/2 - cup apple sauce
3- cups fresh or frozen blue berries
1- egg
1 1/2 cups  Slenda
1- tbl spoon nutmeg
1-tbl spoon vanilla
1/2- cup skim milk

.
Directions:

.
 Hand mix all the above ingredients together in medium mixing bowl. And pour into an 8x8 baking dish or pan that has been prayed with cooking spray and bake at 350-400 degrees until the center has reached 160 degrees or spongy when you press on it.
Note: When using splenda bake on lower rack.  If you use sugar bake on middle rack.

"Beans Beans the Musical Fruit"

Beans have been a staple food for many generations, and now that we know their value in terms of protein,fiber and costs beans are probably the most cost effective healthy food we can put on the table; except for the gas that they produce more households would serve them more often.

.
I am going to list some helpful solutions to the gas problem.
Beans have an outer shell that has a lot of Complex Sugar that causes the UN-friendly gas; so the solution is to reduce this complex sugar in the preparation process.  Listed below are some time honored methods used.

.
1. It is said that if you soak beans in a water, baking soda solution overnight and rinse three times before cooking that there will be no gas. This mostly helps the break-down the outer shell but as the outer shell is opened the beans will absorb some of the baking soda, thus changing the taste of the beans somewhat.  This method is helpful  but not complete
.
2. If you soak beans in a Saltwater solution overnight this method will definitely help soften the outer shell of the bean making it cook quicker and help remove some of the complex sugar, but the bean does absorb some of the salt.  This method work real well for a quick cook about 2 hrs for 1lb of beans, but is marginal for reducing the complex sugar ; thorough rinsing is necessary.

3.This method works real well but is rather involved for what should be a simple process. you soak your beans overnight the rinse 2-3 times add fresh water and boil for 1 hr and them remove all liquid and rinse. now add your seasoning enough liquid to cover beans by 1-2 inches.
.
4. This is the method I use. I soak my beans overnight in fresh water, before cooking I rinse 3 times and add the beans to a lined crock pot with enough fat free beef or chicken broth to cover by 1 inch and add seasoning ,no salt until done.  If need be any added liquid is more broth and cook oh high till fall apart done.   Then before I eat any I take 3 beano tablets and enjoy gas free beans.

"Flat-out Good"

I have been experimenting with a fairly new product on the market made by Flatout a company that makes flat bread its called  Flatout foldit .  This flat bread is the most unique and versatile flat bread I have seen it is high in Fiber and omega 3 plus whole wheat and low in fat and carbs while being quite filling, and only 90 calories per unit.

.
Each unit can be grilled, toasted or baked it into a personal pizza; or  about anything you might use bread for with less calories and all the good stuff in it.  I use this with a turkey patty as a burger, It works quite well for breakfast sandwiches, grilled cheese and make a good personal pizza.

.
I have found this item in most food stores along with tortillas; even Wal*Mart has them.

"Shake and Fry"




THIS IS VERY SIMPLE
.
For convenience I use a med-large non-stick skillet to cook with.  Recently it became too warm to fire-up the oven when I was fixing some shake and bake pork cutlets; so I decided to cook my cutlets  coated with the Shake and Bake extra crispy mixture in my skillet. It worked quite well.  The results was a coated pork cutlet that was very similar to deep fried without all the extra fat that results from deep frying.  Since then I have also cooked chicken in the same manner; this also works well.  The big difference is that you need to watch the cooking process much closer to avoid the possibilty of scorching the coating.  Just coat your skillet lightly with olive oil; and follow the coating instructions on the Shake and Bake package and place the coated meat in the skillet and cook on a low heat until the center is at least 160 degrees.        That's It

Very Simple Chicken Scallopini

This recipe generally referes to Veal as a meat source; but most any kind of meat can be used. 
If you read about scallopini in cookbooks and the Internet you will find that most of these recipes are very rich, mostly high in fats.  My recipe is very lite enabling you to enjoy often.  In this recipe I use Chicken.  Add more as needed.

Ingredients:
6-oz chicken breast thinly sliced or chicken tender loins
12-14-oz of fresh mushrooms thinly sliced
1-can of 97-percent fat free cream of mushroom soup

.Olive oil
Parmesan cheese (the grated type)

.
Directions:
I use the tenderloins, in a med-large skillet
add enough olive oil to lightly coat the cooking surface and lightly brown the chicken, now remove the chicken and set aside.  Add the mushroom soup (UN-deleted) to the skillet then add the sliced mushrooms and on medium heat saute till slightly tender now place the chicken back in the skillet and coat the top of the chicken with the grated Parmesan cheese; continue cooking till the cheese is melted,                                            That's It !!  serve with  Whole Wheat Linguine pasta

"Tripple Chocolate Mess"

I review and fix allot of recipes, I am not sure where I got this one; but I like it since we both like chocolate a lot.  This recipe will certainly give you a chocolate fix.  This by the way is cooked in a crock pot.

Ingredients:
1-pkg chocolate cake mix.
1-pt fat free sour cream.
1-pkg sugar- fat free instant pudding mix.
1-small bag of dark chocolate chips.
1/2-cup apple sauce (no-sugar added)
1-cup water
4-eggs
1-cup walnuts if you like

Instructions:
Spray your crock pot inside with non-stick spray.  Mix until smooth.  keeping in mind that the chips and nut will remain solid. pour this all into a crock pot and cook on low 6-8 hours
That's it!!

"A Chicken in a Chicken in a Chicken"

The title of this recipe signifies that this could be fun; but it can also be a bit challenging when you first read the directions, just hang in there it's not as hard as it seems.

Ingredients:
1- whole chicken
1- boneless chicken breast
1-boiled egg (peeled)

.
Directions:
This is the part that you might say "noway" but it is not that difficult; take the whole chicken and on a cutting board place the chicken so that the back is up facing you; remove the parsons nose (the tail)
and with a sharp knife cut thorough the skin down the bake bone the full lenght of the chicken. What you are going to do is bone out the chicken except for the leg and thigh bone leave them there, once you have most of the bones removed, take the separate boneless breast and butterfly it open and place the boiled egg inside and fold the butterflied breast back over the egg. Now place the breast with the egg inside to boned out chicken and place this in a baking pan and loosely tie the legs and bake at 375 degrees or until the inside temperature is 180 degrees.  That's it!!  you now have a chicken in a chicken in a chicken

A Drop In The Bucket

This recipe is new idea for a unique drop biscuit.

.
Directions:
Use what ever drop biscuit recipe your comfortable with.  I use a ready mix (Jiffy Baking Mix) just to keep it simple.   Just follow the directions on the package.
Once you have your biscuits mixed up just simply place the dough in a seasoned muffin tin and fill each hole to the top. now you have a drop in a bucket; Bake according to the directions on the package. Now you have a drop(biscuit) in a bucket (Muffin tin)  This is a different way of enjoying a drop biscuit that is not all weirded out.       That's it!!

"Coffee Filter Cheese"

This is a fun and unusual "Recipe".

Ingredients:

.
1- cup fat free plain yogurt (the flavored ones don't work)
1- coffee filter
1- small strainer
1- bowl slightly smaller than the strainer.

.
Directions:
You simply add a cup of the yogurt to the coffee filter; now place the filter with the yogurt into the strainer; then place the strainer over the bowl and place into you fridge, for approx. 4-5 days.  At end of the 4-5 days most of the moister in the yogurt will be drained out and you now have yogurt cheese spread to apply to you morning toast.
That's It!!

Peanut Soup

This is one of my most memorable soup recipe that was given to me by a chef at restaurant we visited.  I will not divulge where to protect my source.  We found this soup to be very different as the name applies.

Ingredients:
2-cups dry Lima beans
28 oz chicken stock
1- stalk celery
2- bay leaves
1/8- tsp nutmeg

.
1-small jar of LOW-FAT chunky peanut butter.

.Directions:
Place first 5 ingredients in a crock pot and cook on high till Lima beans are mushy (Approximately 2 hrs, add more stock if this is too thick.  Now add the jar of peanut butter cook on low another hr
.
Serve with some chopped dry roasted peanuts on top.  THATS IT!!

Rosemary Skewers


This is not a recipe. It is just a proceedure you might want to try now that the grilling season is here.
Kabobs can be fun and simple.  I frequently use Rosemary stems as the skewers to make a very tasty and unusual kabob. We are frequently at locations where rosemary is growing in flower beds so I ask the owner of said flower bed it I can have a few stems, generaly it is not a problem.  I cut these stems about 10-12 inches long, I use stems that are small in diameter and strip off the leaves; add my ingredients and grill till done; the Rosemary flavor comes right through the stems into your ingredients.  Rosemary stems can also be found at many grocers produce section.

Hot Air French Fries

French fries have become a natural side dish just to about anything fried.  Back several years I spent several months working to help build factories that produced frozen french fries; for the many different fast food resturants, plus the fries you find in the frozen section of the supper markets.  This is a huge industry.  When a potato sets out to become a gaing of fries he has no idea whats at stake.
fist off he is cut into a zillian pieces, then run trough a hot water bath briefly to remove the good sugar from each slice, then goes through a bad sugar bath so when fried  each fry will brown evenly. Now the fries are litterly boiled in oil lightly and rapidly frozen,  Now when they reach thier destination they are boiled in oil again and then served to the customer.  Thats the way they do it.

The way I make french fries is quite different; But the results have fewer calories and fats.

Instructions:
I leave the peelings on (washed) my potatoes and slice lenghtwise and place these fries in a zip-lock bag and add a teaspoon of olive oil and shake this up to cover all the fries.  For best results I place these fries in a oven pan that has a rack and place the pan in a convection oven at 400 degrees and bake till brown. Then lightly salt.  Thats It!! a coventional works also

Sweet Italian Sausage & Sauerkraut

Sauerkraut and wieners has for years been a real simple mundane dish that had no personality and generally a lopsided flavor.  The recipe I use perks this dish up to where you could have company in and be proud.  As you consider ingredients adjust according to the servings you need, this recipe is for two.

Ingredients:
A package of 5 Sweet Italian Turkey sausages.
1-can or jar of sauerkraut (your choice)
1/2 cup un-sweetened apple sauce
1-Apple (Any kind) diced
1 potato sliced into rounds

Directions:
In a large skillet lightly oiled with olive oil, place the sausages and sliced potato; cook on moderatly high heat until lightly browned; now add the apple,sauerkraut and apple sauce stir around gently.  Now place a lid on the skillet and simmer for 15-20 minutes.   Thats it!! Enjoy

Omelet Stuffed Pepper

Back several years when we raised our own peppers; it was much easier to find good sweet peppers for this recipe.  Now if you shop in a super market chances are these peppers came from Outer Soblovia or some such exciting location, that lists it as Organic uh uh right!! I generally wait till I can find these at a local farmers market.  Anyway good peppers are starting to show-up locally; so its time to fix-up this easy wonderful version of a stuffed pepper.  I try to use a red or yellow sweet pepper (green works OK to) if one is available for size and shape.  The ideal candidate  is large and the bottom is fairly flat on the bottom.
This recipe is for one stuffed pepper, so multiply the ingredients according to how many you are making.

Ingredients:
1-large flat bottomed sweet pepper of your choice (top trimmed off and seeds removed)
Enough of your favorite omelet mixture to fill the pepper cavity

.Parmesan cheese                                                     

.Directions:
In a shallow baking dish or cake pan, add your pepper(s) (standing-up) and fill with your omelet mixture till about 3/4 full; sprinkle the top with Parmesan cheese.  Add just enough water to cover the bottom of the pan about1/4 inch (this helps steam the pepper(s) and prevents scorching)
Now place this baking dish in a 400 degree oven long enough for the omelet to be solid in the middle (approx 45-50 mins depending on how many you are cooking)
We use this as a dinner entree    That's it!!

Strawberry Bread

The Strawberries in this bread keep the bread moist so it needs very little oil.

Ingredients:
2-cups sifted cake flour
1-tsp baking powder
1/2 tsp salt
3/4 cup sugar or splenda
1-tsp ground cinnamon
.
1/2-cup skim milk
2-tbs vegetable oil
2-eggs lightly beaten
.
1-cup chopped fresh strawberries
1-tbs cake flour

.
Cooking spray

.
Instructions:

.
Step #1 combine first 5 ingredients in a medium bowl; make a well in center of mixture.
.
Step #2 combine milk,oil and eggs; add to dry ingredients, stirring until just moistened.
.
Step # 3 Dredge strawberries in 1 tablespoon flour; gently fold into batter.
.
Stop#4 Spoon batter into loaf pan that has been coated with cooking spray.  Bake at 350 degrees approx.  hour or just short of that hour.  Cool in pan 5 Min's. Remove from pan and completely cool on wire rack.      That's it you did it enjoy!!

Buttermilk Biscuits

Contrary to its name,buttermilk is naturally low in fat.

Ingredients:
1-1/2 cups all-purpose flour
2-tsp baking powder
1/2-tsp baking soda
1/4-cup Wheat Bran (fiber)
1/2-tsp salt
1/2-tsp sugar or Splenda

1- cup nonfat buttermilk
2-tbs extra virgin olive oil
1-tbs non-fat sour cream

.
Butter-flavored cooking spray
.
Directions:
Step #1 combine fist 6 ingredients in a medium bowl; make a well in center of mixture.

Step #2 Combine Buttermilk,oil and sour cream; add to dry ingredients, stirring until just moistened

.
Step #3 Turn dough out onto a lightly floured surface.  Knead 5 or 6 times.  Roll dough to 3/4 inch thick cut into rounds with a 2-1/2 inch biscuit cutter,  Place on an UN-greased baking sheet. Spray tops lightly with cooking spray.  Bake 400 degrees 8-10 minutes or until lightly browned. 
This should yield 1- dozen at 94 calories each.

"Baked Sloppy Joe"

Sloppy Joe's are considered a fast quick fix meal item that is nothing more than a seasoned hamburger filling with a low personality.  I happen to like the sloppy Joe filling but not necessarily in a sandwich.  So in order create a prime "Lite"meal item I came up with the following recipe.

Ingredients:
1-lb ground turkey
1/2-cup diced onion
1/2-cup diced sweet pepper
1/4-cup Wheat Bran
2-cups Jiffy Baking Mix
1-can commercial Sloppy Joe sauce (look for one low in sodium and sugar, most are OK)

Directions:
In a large skillet or pan brown the ground turkey and add the onions,pepper and Sloppy Joe Sauce, heat till bubbling the turn off the heat and let set 5-10 minutes while you mix up the "Crust"

The Top & Bottom Crust:
Add the Jiffy Mix and wheat bran to a medium mixing bowl, add enough water to make the mix  just barely pourable. Now using a 10-12 inch baking dish that has been sprayed with a non-stick spray.
In your baking dish pour in just enough of the crust mixture to cover the bottom of the dish and place in a 400 degree oven long enough to just firm up the mixture, let this cool a few minutes, the add the meat mixture and top off with remaining dough. I add fresh crated Parmesan cheese, and bake completed dish at 400 degrees until 160 degrees in the center.  When done let stand 5-10 minutes to allow flavors to mingle. Finally that's it

"Lite" Curried Chicken Stir Fry

Stir Fry's are a great way to have your veggies .  There are many types of stir Fry's depending on the kind of veggies you like. I use a frozen stir stir fry mix that has several different types of veggies, but usually for sure has broccoli as a major item.  I add some cabbage,Sweet pepper and celery just the way I like it, so here is my recipe.

Ingredients:
8-oz skinless bone less chicken breast cut in 1/4 inch wide strips.
3-cups cooked thin spaghetti.
1-small size frozen stir fry vegetables
1/4-cup "Lite" Soy sauce. (low sodium)
1/4-cup pineapple juice.
1-tbs curry powder.
2-tbs-Extra virgin olive oil.

Directions:
In a large skillet add the olive oil and chicken strips and curry powder, lightly brown the chicken at medium heat.  When chicken is browned, add the rest of the ingredients and what the hey throw in a few chunks of pineapple if you like.  Cover the pan I use a glass cover so I can watch it cook. Simmer about 10-15 minutes until the frozen vegetables are tender and serve it up hot. That's it!!

"Lite"Chicken Cesar Salad

A Cesar salad is probably the highest calorie salad offered at a good restaurant.  I will tell you a Chicken Cesar salad at Out Back steak house without dressing is 1030 calories, I hate to think what it would be with dressing.  I have found that my way lets you have a nice Chicken Cesar Salad  for less than half that with dressing. First off at most Supper Markets in the produce department you will find a Lite Cesar Salad kit, the entire kit put out by Dole is only 270 calories and that includes the dressing and croutons along with Romain Lettuce that serves three.

.Ingredients:
1-package Dole Lite Cesar Salad Kit
3-Chicken tenders

.Instructions:.Using your favorite spices pan grill at a med-low heat the chicken tenders, when done slice these tenders into strips, Add the lettuce to a large salad bowl with the dressing and toss just enough for the lettuce to be lightly coated.  Now on top add the chicken strips and crouton I sprinkle lightly with Parmesan cheese. It's ready to serve  That's it!!

The Ultimate Mashed Potato

For years cooks have followed traditional recipes for Mashed Potatoes,
handed down for many generations.  These recipes called for lots of Butter and Milk.
My recipe is much lighter with no fats or cholesterol but looks the same.

Ingredients:
4-large Canadian Gold Potatoes (Medium diced)
1-cup DE-Fated chicken broth (canned is OK)
1-minced garlic clove (optional)
1- very light sprinkle of rosemary powder.

.
Instructions:
Steam or boil the potatoes until tender (I leave the peelings on but not necessary) while the tender potatoes are still hot I add the other ingredients
and use a masher to mash and mix-up all the ingredients salt to taste.
(a mixer is OK for whipped potatoes) Only use what chicken broth needed for the Constancy you like.                                                                    Thats it

Try this, you will notice that the gold potatoes give the eye the illusion of added butter.

15 year Old Gravy

Shortly after I graduated from High School many years ago.  I went to work for the Forest Service in the Southern Cascades of Washington.  My brother was staying with a couple of Hill Billy cousins near the job, I was invited to stay there also.  Since my job didn't start for a few weeks I was ready to start experiencing life, and boy did I get a dose at that place.  The cousins were bachelor brothers and Thurlow the older brother was a lumberjack, the younger brother Harley had at one time also worked in the woods, until he was injured so he stayed home and did the cooking, the cleaning was done by no-one sooo life there was interesting to say the least. for this story I will only mention the food.
Every morning Harley would fix breakfast for brother Thurlow before he went to work which consisted of Bacon, ham, eggs, Pancakes or biscuits and gravy.  The gravy is the subject of this story,I have always had an interest in food preparation so I watched very closely how Harley made the gravey.
.
This is the way it was made it, he added enough flour to the bacon-ham grease to soak-up all the grease then added some kind of milk (I never knew what kind, I was afraid to ask) stired this up until thickened and the added the new gravy to the old in the bowl Yum!! I then couriously asked how long he had been doing gravy this way and he smiled and said oh about 15 years.  Wellll I like gravey but that certainly put he skids to any gravey there.  Some of that gravy was 15 year Old

Baked Alaska

Numerous recipes abound concerning Baked Alaska.  I got my recipe from my grandmother, they had a dinner house in Reno, NV. during the 1950's and their specialized desert was Baked Alaska she showed me a simple way of making this unique desert as an individual Baked Alaska. Her recipe was not concerned with fats and sugars but mine is, and you would be far pressed to tell the difference.

Ingredients: (for one serving)

.
2-short cakes (the type found near strawberries in the market, the ones with the little cup)
1/2 pint low fat, low sugar vanilla ice cream.
1-2-tbs sugar free Raspberry preserves
2- cups meringue made with spenda

.
Directions:
place the shortcake cups with the cup up and add the preserves then fill with the ice cream into one cup, then place the other cup inverted on top of the ice cream making sure that all fits even, now place the cake and ice cream assembled in the freezer over-night
When close to serving add the meringue covering the frozen cake well and place in  375 degree oven until meringue is lightly browned (usually about 5 minutes) and serve immediately.

This is a great desert when you want to put on the dog or just enjoy yourself.

Chili Bake

This is an Ideal recipe to use left-over if there is any chili from the "24 Hour Chili" recipe if not this basic recipe uses canned chili. I got this recipe from a next door neighbor several years ago.

Ingredients:
.
1-can of your favorite chili (if needed)
1/2-Green pepper
6-green onions diced
1/2 cup Masa
1/2 cup Jiffy all purpose baking mix
1-Egg
1-small can of corn
1-sprig of Cilantro chopped
2-medium tomatoes diced
V8 juice (used as liquid for stirring

Directions:
Add all ingredients together in large mixing bowl using the V8 juice as liquid just enough to make sure the flours are well mixed with the other ingredients.  Pour the mixter in oiled baking dish smooth out and add some low fat Mexican cheese on top.  Bake at 375-400 degrees until 160 degrees in the middle
when done place on cooling rack for approx. 5 minutes before serving.
Serve with salsa,sour cream and Guacamole.
This recipe should serve 4, so if you need more just adjust the recipe to accommodate servings

Ultra-Thin crust Pizza

While most Pizzas have a thick or moderately thick crust, occasionally you will find what is called cracker thin crust.  Since most of the hidden calories actually are in the crust, the thinner the better if you are trying to limit fats and calories, so the cracker thin crust is a good choice, but my thin crust is even thinner than the cracker thin crust.  I use a wheat tortilla high in fiber and low in calories as the ultra-thin crust.  The recipe I use allows a little better choices in toppings.

.This recipe is for one serving so adjust the values according to your needs.

Ingredients:

.
1-9-10 inch whole wheat tortilla.
2-tbs fat free ranch dressing.
1-tsp garlic powder
1-cup low fat Mexican style cheese. (weight watchers makes a good one)
1-cup Mozzarella cheese ( low moister-part skim milk)
1-cup filling (your choice)

Instructions:
Now its time to "Build" your pizza.  Pre-heat your oven to 400 degrees.  Lay your tortilla flat on a cookie sheet and apply the ranch dressing, sprinkle the dressing with the garlic powder, at this point you can add some Italian spices also, now add the Mexican cheese, then add your filling (I use a diced pre-cooked chicken breast)now apply evenly the Mozzarella Cheese.  Place your pizza in the oven a cook till the cheese has melted a starting to bubble.  Remove and serve sliced. That's it!!

Breakfast Burrito

This is a simple easy Breakfast Burrito.  The restaurants  seem to be in
Competition with one another to see who can make the biggest one.
using the "Kiss" way this can be a simple deviation from a boring routine
breakfast. Keep in mind that this recipe is for two people.


Ingredients:
4- whole wheat high fiber Burrito size tortillas. (or wraps)
4-eggs scrambled
4-oz 2% cheese
2-Turkey sausage patties diced
Green Tabasco sauce

Directions:

Scramble the eggs and sausage together with a couple light drops of the green Tabasco sauce or more if you like, add the cheese on top of the scramble and put a lid on to just melt the cheese.  Now Davide your scramble into 4 parts.  Now add one part of the scramble to each tortilla and fold and roll-up. Done!!
I will frequently toast in an oven for a more crispy Burrito (your choice)

Orange-Pineapple Chicken

For something different and showy try this recipe.
The Kiss principle applies here. anytime you see the kiss logo that means this is a simple and quick recipe.

Ingredients:
2-Boneless skinless chicken breasts.
2-Pineapple slices.
1/2 cup orange sauce.

.
Orange Sauce:
1/2-cup orange juice.
1-tbs corn starch
Stir the corn starch and orange juice together, bring to low boil in small pan (can be microwaved)
until thickened.  Set aside for the moment.

.
Instructions:
Brush lightly both chicken breasts with extra virgin Olive oil, place chicken breasts in a skillet Cook on medium heat until browned on both sides testing to make sure chicken is done in the middle either with thermometer 160 degrees, or no spring to touch. Add a pineapple slice to each breast and drizzle the orange sauce over both chicken breasts.  Set skillet temp to low and cover for 5 minutes.(to let flavors blend)

Taco Dogs

This is a shift from just plain old hot dogs to something quit unique and special.

Ingredients:
1-package of wieners (your choice, I use Turkey dogs)
8-10 Taco shells
Shredded lettuce
low fat sharp Cheddar cheese (or your favorite)

.
Directions:
Grill the dogs, after grilling slice into 1/2 length wise to better accommodate the taco shell.
place 4 dog strips in each shell top with cheese, Salsa and chopped lettuce, and now you have a taco dog.  Kids love this unique twist and so do I

24 hour Chili

This recipe should be fascinating and fun to make, it comes from the "Fat Fighter" book.

Ingredients:
2-3-cups pinto beans (pre-soaked)
1-small can of kidney beans
1-lb ground turkey browned with the diced onion
1-med. onion diced
1-Anaheim pepper diced
2-cloves garlic crushed
1/2 cup salsa (your choice mild,med or hot)
3-tbs chili powder
2-tbs cumin
28-oz can crushed tomatoes
1-tsp cocoa powder (yes cocoa powder helps bring out flavors)
1-tsp salt
1/2 tsp paprika
1/4 tsp nutmeg
1/4 tsp liquid smoke

.
Instructions:
The pinto beans should soak in water overnight. I use a medium  size crock pot (larger is better with a slow cooker plastic liner.
Place all ingredients in the crock pot and stir-up gently, and set the temperature for low. (300 degrees if your crock pot has temp readings) cook for 24 hrs.
If you want your chili spicier add some cayenne pepper or hotter peppers.
Also if you want your chili thicker you can use a water mixed masa flour (Finely ground corn meal)

Sausage-Egg "MK" Bagel

Instead of going for a local fast food high calorie-high priced breakfast sandwich, I have devised my own version much lower in calories and fats that is just as good.

.Ingredients:
.
1- thin sliced bagel-100 calorie version  ( available at most bread counters)
1- Frozen Turkey sausage patty (found in Wal*Mart freezer section)
1- Frozen egg patty (also found in Wal*Mart freezer section)

.
Instructions:
.
I heat-up the sausage and egg pattys in a non-stick skillet then add the pattys to 1/2 of the bagel and then add then add the top and place completed sandwich in the skillet to warm-up.   THATS IT!
.
Variations:
.You can use an English muffin instead, I use the bagel because bagels are inhertly lower in fat and calories. (your choice) The above recipe is 290 calories for the whole sandwich. you can also add a cheese slice keeping in mind everything you add are additional calories.

Muffin Jacks

On our travels we found a day that was too hot to run the oven; but we had a major hankering for some muffins.  I mixed -up my muffin batter extra thick and using a 1/4 measure cooked them in a kitchen sprayed skillet. Since they are a cross between Muffins & Flap Jacks thats how the name was started.

Ingredients:
.
1-cup jiffy mix
1/2 cup splenda
1/2 cup apple sauce
1-egg
1/2 cup oat cereal bran
1/3 cup sugar free maple flavord syrup
1-cup dried fruit (your choice)
.
Proceedure:
.
Mix all ingredients together (I didn't need additional liquid) in med. mixing bowl.  This batter should be just barely thinner than cookie dough.  Add 1/4 cup scoops to a kitchen sprayed large skillet that has been heated to a low med heat and brown on both sides, Kinda like making pancakes about 3-5 minutes on each side since the batter is thicker, it takes a little longer to get the middle done.  This should yeild 8 Jacks at 1/2 the calories of regular muffins

My Kitchen

I am sure some of you are curious about whats in my kitchen?  Well here is the skinny. I operate out of an RV which limits the space available for storage and (essential gadgets) but for those that have the space my recipes sometimes reflect this.  I have for years operated in the kitchen on the principle of the "Kiss":theory  which means ( keep it simple stupid). first off I keep nothing that is high in sugars,salt or fats in my limited pantry being in the modern era I have on hand and use many items that are relatively cost effective and simple to use.

You would find such items such as :

Jiffy mixes that are cheap and effective when I enhance these with other items.

Splenda instead of sugar, this works for us but maybe not for others.

.
Butter flavor kitchen spray (Crisco brand works for us)

.
Frozen fruits and vegetables, as these are always frozen at peak quality

A wide variety of spices we like.


.Extra virgin olive oil

.

HEALTHY FRIED POTATOES

Fried Potatoes have for years been associated with UN-healthy fatty foods.  This is for good reason, cooks for years have used a lot of oil mostly (BACON GREASE) in their skillets to fry potatoes looking for that brown crispiness.  Well my version browns the potatoes and leaves them crispy plus healthy.  A medium sized potato is roughly 75 calories. I use extra virgin olive oil (sparingly) in this case about 3o calories. this recipe uses two potatoes and a 1/4 tsp olive oil

The way I do it is:
I dice two potatoes with peeling left on. place the diced potatoes in a qt zip lock bag add the 1/4 tsp Extra-virgin olive oil, close the bag up, mix up the potatoes and oil make sure that all potatoes are covered.  Now empty the potatoes covered in oil,add salt and pepper into your skillet and cook with medium heat making sure all sides are brown by turning them over frequently .  Now you have a good healthy fried potatoes.

This same method can be used for hash browns as well. You can add chopped onion and green pepper in the same manner and have potatoes "O'Brien".

Try this and you will find that fried potatoes are just fine to have as an alternate side dish.

OMG Naked Fried Chicken

This recipe came to me by pure fluke. Many years ago.  I was working late and my oldest daughter at the age of around 10 years old decided to have the evening meal ready when I got home from work. For dinner she decided on Fried Chicken.  She had never done this before, so she fried the chicken without any coating.  I had never fried chicken without a coating,  so naturally I was sceptical as to what this would be like.  Being a lover of new ideas I was delighted as to the outcome. so over the years I have enhanced her idea a little.  The following recipe is my version of "Naked" fried chicken.

Ingredients:

1- cut-up chicken or any chicken pieces (skin removed)

Extra virgin olive oil

1/4 cup citrus soda

your favorite spices that you normally would use for fried chicken.

A non-stick or well seasoned skillet.

Procedure:

Lightly brush all sides of the chicken pieces with the olive oil and season all sides of the chicken pieces with your spices.  I primarily use garlic and onion powder, salt lightly and place all the pieces of chicken in your skillet and brown these pieces well on all sides. then turn the heat down to simmer and pour in the citrus soda cover the skillet with a lid and cook 15-20 minutes.
The soda will help tenderize the chicken

After you remove the chicken for serving there will be a lot of sauce in the pan this can be used for the base for gravy or held for a great added seasoning for vegetables or soups or just about anything you can imagine except maybe brownies

This is a good way to have fried chicken that low in fats and very different.

"Green Eggs and Ham"

This recipe has been widely publicized as a fantasy, but is is as real as you want it to be.
The following is my version of a fun way of adding vegetables to a normally simple affair.

Ingredients:
 4-Eggs
1-small green pepper (any kind) as long as it's green
4- 3oz pieces of lean ham

.
Directions:
Chop the pepper into very small pieces and add to the eggs and stir together, salt the way you like it.
Pan grill the ham pieces and set aside.
Season the same pan the ham was grilled in with extra virgin olive oil, add the now green egg mixture now stir while cooking to create scrambled eggs.

You now have "Green eggs and ham" instead of the pepper you can use chopped spinach instead.

.Kids really like this story book breakfast.

The "New Improved" Lite Brownie Recipe

The Brownie recipe in The Start part of this blog has been recalled in favor of this new improved version.

Ingredients:

1 cup commercial brownie mix (any kind)
1 cup Jiffy mix
1 cup splenda
1/4 cup Special Dark Cocoa powder
1/2 cup apple sauce
1 Tbs vanilla extract
1/2 cup oat fiber
1/2 cup walnuts (Optional)
1/3 cup fat free milk

Mix all ingredients together and pour into greased (not bacon greased) pan and bake at 375-400 degrees until brownies are firm to touch.

This recipe should produce 18 small brownies at less than 50 calories each.

Cinnamon Roll Bread Pudding

There are literally dozens of recipes for bread pudding. But this one has a slightly different "Twist".

I use "left over" cinnamon rolls or just flat out creat some left overs.

.Cinnamon Roll Bread Pudding
.
Ingredients:
.
2 rolls of reduce fat cinnamon rolls (Whampum type)
2 eggs
2 cups non-fat milk
1 tbs Alspice
1 tsp cinnamon
1 tsp vanilla
1 cup Dried cranberries
1/2 cup diced walnuts
1 cup sugar or splenda
Cook off the cinnamon rolls per package instructions. When the rolls are done, cut them up in quarters and place them in a baking dish that has been sprayed with non stick spray. Sprinkle the walnuts and cranberries over the chopped rolls .

Now take the remaining ingedients, eggs, spices,vanilla,milk and sugar and mix well (not with mixer) and pour over the rolls in the baking dish, gently stir just enough to make sure that rolls are covered and bake at 350-400 degrees testing frequently to make sure egg mixter ( Custard) is done.

I use a knife to test, when a knife blade is inserted and removed briefly if it comes out clean your custard is done.

Mashed Potato Things

This is a simple side dish that uses left over mashed potatoes.
Take left over mashed potatoes that have been refrigerated long enough to to be firm using an ice cream scoop, scoop up into balls like you would ice cream an place on greased cookie sheet and sprinkle with Parmesan cheese and place in 400 degree oven bake till brown.
you now have a whole new potato side dish that goes with anything

Apple Pan Dowdy

You can talk with many different cooks and they will mostly have a different origin of this delightful dessert recipe. I will post my recipe for this one, but alternative ingredients that fits your needs works also. To lessen any confusion the ingredients I use comes from my "Purged" pantry, this means that if some of my ingredients don't work for you then fix it for you. But this is how I make it to lessen the fats and calories.

Ingredients:
.
3 med. granny smith apples cut in medium sized pieces
1/2 cup jiffy mix
1 cup Splenda
1/2 cup sugar free pancake syrup
1 tbs. allspice
1 tbs. nutmeg
1/4 tsp. cinnamon
1/2 cup dried cranberries
1 cup diced walnuts
1/4 cup oat bran
1/2 tbs. Vanilla
1 egg
.Mix all ingredients in med. bowl and place the mixture in a baking dish that has been lightly sprayed with a kitchen spray and bake at 350-400 degrees until apples are tender. Let this cool for about 5 minutes and serve warm with your favorite whipped topping.

"Pizza Boats"

There are very few Americans that can say that they don't like pizza.

Most pizzas are loaded in saturated fats, calories and virtually no fiber, but darn they are tasty.
Since I, like most people I occasionally would like the taste of a pizza, when this happens I remind myself that it is very often even a medium pizza can have as many as 5000 calories, so since I am trying to limit my calorie intake, a recipe that would help lower the calorie intake but still have the taste I was looking for. Keeping in mind that most meats that are in pizzas are ladden in fats, I found that lean ham is ok but I love the pepperoni the best so I tried the turkey pepperoni and liked it. the next thing that has a lot of calories is the crust.

Solution:
I took a whole wheat hogie roll and split it in half and removed most of the inside bread to hollow out the roll halves I used a fat free ranch dressing to coat the insides, added some low moisture part skim milk mozzerella cheese shredded filling each half full and added a few slices of turkey pepperoni then toasted in the oven until the cheese was nice and bubbly. Served this with a nice salad. Thus my version of a "Pizza Boat" was launched,

Omelete in a bag

We learned about this recipe from a camper from Canada. It proved out to be fun and practical at the same time.

.After you determine how many people you have to serve Break 2 eggs per person in a bowl a mix these up as if you were going to use them in a regular omelet and set aside, now in separate small containers chop up what ever ingredients you would normally use to fill an omelet, set these aside. take a pint size freezer bag(make sure it is a freezer bag) and have everyone put their name on a bag.

.Add the equivalent of 2 eggs of the egg mixture about 1/3 cup to the bag and the have each person add to the bag what they want in their omelet (cheese & tomatoes don't work well)
they can be added after omelet is done. Now place these bags in a pot of boiling water and leave the there 17 minutes at least. Takes bags out a place the cooked omelet on a plate all of the added ingredients will be in the middle.

"Camp Fire Biscuits"

This is a fun delightful thing to do that is ideal when you are camping out, but can also be fun anywhere you have a fire. This is similar to a weenie roast except you use "Wampum" biscuits instead.

First off you need a tube of whamup biscuits (the big ones) then cut a green tree limb about 3 feet long and about 3/4 inches in diameter on one end. A broom handle will work, but I'd rather have the tree limb, if you are using the tree limb peal the bark off on the 3/4 end. Now take a whampum biscuit and wrap it over the 3/4 end and form this to to stick nice and firm, now place this over the fire until golden brown. When brown the biscuit should be done, pull the biscuit off the stick and fill the hollow with your favorite jam or jelly, I use the sugar free ones because they have less calories and better flavor, you can also put a cooked hot dog in there, just whatever jingles your bell. "The 20 Minute Diet

Diets come in all shapes and difficulties, this one is very simple and easy to do, All you need is to have armed yourself with some knowledge as to what is in your food and get some decent exercise. Once you are aware of the calories and fats in your meal the rest is logical and easy. First off about an hour before meal time you enjoy a Magic Muffin (a prior recipe) then you have a reasonably moderate portion of your meal allow 20 minutes to pass. if you are truly hungry enjoy a little more. The muffin helps curb your appetite, after you have had your moderate meal it takes about 20 minutes for this to register in you brain that you are full. So in the process you eat less but don't have that self denial regimental feeling that causes most diets to fail.
