"Green Eggs and Ham"

This recipe has been widely publicized as a fantasy, but is is as real as you want it to be.
The following is my version of a fun way of adding vegetables to a normally simple affair.

Ingredients:
 4-Eggs
1-small green pepper (any kind) as long as it's green
4- 3oz pieces of lean ham

.
Directions:
Chop the pepper into very small pieces and add to the eggs and stir together, salt the way you like it.
Pan grill the ham pieces and set aside.
Season the same pan the ham was grilled in with extra virgin olive oil, add the now green egg mixture now stir while cooking to create scrambled eggs.

You now have "Green eggs and ham" instead of the pepper you can use chopped spinach instead.

.Kids really like this story book breakfast.

The "New Improved" Lite Brownie Recipe

The Brownie recipe in The Start part of this blog has been recalled in favor of this new improved version.

Ingredients:

1 cup commercial brownie mix (any kind)
1 cup Jiffy mix
1 cup splenda
1/4 cup Special Dark Cocoa powder
1/2 cup apple sauce
1 Tbs vanilla extract
1/2 cup oat fiber
1/2 cup walnuts (Optional)
1/3 cup fat free milk

Mix all ingredients together and pour into greased (not bacon greased) pan and bake at 375-400 degrees until brownies are firm to touch.

This recipe should produce 18 small brownies at less than 50 calories each.

Cinnamon Roll Bread Pudding

There are literally dozens of recipes for bread pudding. But this one has a slightly different "Twist".
.
I use "left over" cinnamon rolls or just flat out creat some left overs.

.Cinnamon Roll Bread Pudding
.
Ingredients:
.
2 rolls of reduce fat cinnamon rolls (Whampum type)
2 eggs
2 cups non-fat milk
1 tbs Alspice
1 tsp cinnamon
1 tsp vanilla
1 cup Dried cranberries
1/2 cup diced walnuts
1 cup sugar or splenda
Cook off the cinnamon rolls per package instructions. When the rolls are done, cut them up in quarters and place them in a baking dish that has been sprayed with non stick spray. Sprinkle the walnuts and cranberries over the chopped rolls .

Now take the remaining ingedients, eggs, spices,vanilla,milk and sugar and mix well (not with mixer) and pour over the rolls in the baking dish, gently stir just enough to make sure that rolls are covered and bake at 350-400 degrees testing frequently to make sure egg mixter ( Custard) is done.

I use a knife to test, when a knife blade is inserted and removed briefly if it comes out clean your custard is done.

Mashed Potato Things

This is a simple side dish that uses left over mashed potatoes.
Take left over mashed potatoes that have been refrigerated long enough to to be firm using an ice cream scoop, scoop up into balls like you would ice cream an place on greased cookie sheet and sprinkle with Parmesan cheese and place in 400 degree oven bake till brown.
you now have a whole new potato side dish that goes with anything

Apple Pan Dowdy

You can talk with many different cooks and they will mostly have a different origin of this delightful dessert recipe. I will post my recipe for this one, but alternative ingredients that fits your needs works also. To lessen any confusion the ingredients I use comes from my "Purged" pantry, this means that if some of my ingredients don't work for you then fix it for you. But this is how I make it to lessen the fats and calories.

Ingredients:
.
3 med. granny smith apples cut in medium sized pieces
1/2 cup jiffy mix
1 cup Splenda
1/2 cup sugar free pancake syrup
1 tbs. allspice
1 tbs. nutmeg
1/4 tsp. cinnamon
1/2 cup dried cranberries
1 cup diced walnuts
1/4 cup oat bran
1/2 tbs. Vanilla
1 egg
.Mix all ingredients in med. bowl and place the mixture in a baking dish that has been lightly sprayed with a kitchen spray and bake at 350-400 degrees until apples are tender. Let this cool for about 5 minutes and serve warm with your favorite whipped topping.

"Pizza Boats"

There are very few Americans that can say that they don't like pizza.

.
Most pizzas are loaded in saturated fats, calories and virtually no fiber, but darn they are tasty.
Since I, like most people I occasionally would like the taste of a pizza, when this happens I remind myself that it is very often even a medium pizza can have as many as 5000 calories, so since I am trying to limit my calorie intake, a recipe that would help lower the calorie intake but still have the taste I was looking for. Keeping in mind that most meats that are in pizzas are ladden in fats, I found that lean ham is ok but I love the pepperoni the best so I tried the turkey pepperoni and liked it. the next thing that has a lot of calories is the crust.

Solution:
I took a whole wheat hogie roll and split it in half and removed most of the inside bread to hollow out the roll halves I used a fat free ranch dressing to coat the insides, added some low moisture part skim milk mozzerella cheese shredded filling each half full and added a few slices of turkey pepperoni then toasted in the oven until the cheese was nice and bubbly. Served this with a nice salad. Thus my version of a "Pizza Boat" was launched,

Omelete in a bag

We learned about this recipe from a camper from Canada. It proved out to be fun and practical at the same time.

.After you determine how many people you have to serve Break 2 eggs per person in a bowl a mix these up as if you were going to use them in a regular omelet and set aside, now in separate small containers chop up what ever ingredients you would normally use to fill an omelet, set these aside. take a pint size freezer bag(make sure it is a freezer bag) and have everyone put their name on a bag.

.Add the equivalent of 2 eggs of the egg mixture about 1/3 cup to the bag and the have each person add to the bag what they want in their omelet (cheese & tomatoes don't work well)
they can be added after omelet is done. Now place these bags in a pot of boiling water and leave the there 17 minutes at least. Takes bags out a place the cooked omelet on a plate all of the added ingredients will be in the middle.

"Camp Fire Biscuits"

This is a fun delightful thing to do that is ideal when you are camping out, but can also be fun anywhere you have a fire. This is similar to a weenie roast except you use "Wampum" biscuits instead.

First off you need a tube of whamup biscuits (the big ones) then cut a green tree limb about 3 feet long and about 3/4 inches in diameter on one end. A broom handle will work, but I'd rather have the tree limb, if you are using the tree limb peal the bark off on the 3/4 end. Now take a whampum biscuit and wrap it over the 3/4 end and form this to to stick nice and firm, now place this over the fire until golden brown. When brown the biscuit should be done, pull the biscuit off the stick and fill the hollow with your favorite jam or jelly, I use the sugar free ones because they have less calories and better flavor, you can also put a cooked hot dog in there, just whatever jingles your bell. "The 20 Minute Diet

Diets come in all shapes and difficulties, this one is very simple and easy to do, All you need is to have armed yourself with some knowledge as to what is in your food and get some decent exercise. Once you are aware of the calories and fats in your meal the rest is logical and easy. First off about an hour before meal time you enjoy a Magic Muffin (a prior recipe) then you have a reasonably moderate portion of your meal allow 20 minutes to pass. if you are truly hungry enjoy a little more. The muffin helps curb your appetite, after you have had your moderate meal it takes about 20 minutes for this to register in you brain that you are full. So in the process you eat less but don't have that self denial regimental feeling that causes most diets to fail.

This works real well if you are going to a buffet with aunt
Jane also when at work and going out with the gang for lunch.

Planning ahead is a key factor.
.
We are a nation of over eaters so this plan alows you a normal lifestyle without being on a dreaded Diet to maintain your overal health and weight.

Pop Corn Salad

This is a fun and simple kid pleasing salad.

.All you need is a popped bag of pop corn add a few diced pickles and olives, and most anything that you might add to a potato salad, primarily whatever else that is not thin or runy that you like. I use a light miracle whip and just a small amount of honey mustard a dressing, use just enough to lightly coat the pop corn and serve immedeatly this salad is not good left over unless your weird. But it is deffinatly and conversation item not only that it works quite well and very tasty. This is definatly one to experiment with.

Trail Drive Apple Pie

Back in the early days of the old west cowboys drove cattle north in an effort to get better prices for their cattle. This drive sometimes would take several months to accomplish, it was long hard days of work, traveling with these cowboys was a chuck wagon and a cook to provide meals for these hard workers. Many of these cooks had a specialy that they fixed often, a cook that could make Apple Pie was rated up there like a god. so here is a basic frontier trail drive recipe for apple pie.

The pie crust was a simple affair, consisting of flour, salt. water and what ever fat was avilable
(today we use shortening) but the trail drive cooks mostly had "Bacon Grease" as the only available "Shortening" so that was what was used, as for apple filling dried apples was the only apples they traveled with, they would boil these apples with sugar to re-constitute the apple when this was done they would roll out the pie crust add filling to 1/2 of the crust and the fold it over crimp the edges and fry this in a large cast iron pan with more "Bacon Grease" until the crust was brown. Now the cook was a hero. Also the"Fried Pie was born.

Since I don't use "Bacon Grease " in anything. When I get a hankering for apple pie I use the following Recipe:
.
5 med apple. sliced or diced
2 cups slenda
1 tbs allspice
1/2 cup dried cranberries
1/4 cup walnuts
1/2 cup applesauce
.
Mix these ingredients together and place in a baking dish.(non-stick spray)
top off with a few drop bisquits that has added nutmeg and slenda.

Bisquit topping:
1 cup Jiffy mix.
1/2 cup splenda.
1/2 tbs nutmeg
1/4 cup water
.
mix these ingredients togather using a soup spoon size spoon, add a few of these spoonfulls of dough to the top of the apples and bake at 350-400 degrees until the apples bubble and tender up. Enjoy
.Now thats better than a cowboy fried pie
